Do airline companies normally lower their prices if the airplane still has plenty of seats left?
I am planning to travel from Denver to Fresno, CA around mid-May for 2 weeks. United airlines is the only direct flight! I was searching and it will cost me around $595. That is way too expensive for me. But I was looking at the seat map for that flight (for the day I have chosen) and the plane still has A LOT of seats left (like 36/50). Do you think the price may go lower since a lot of seats still have to be filled? Should I wait a little more? Please give me some advice. Thank you!

There is no way to predict it. The airline monitors the pattern of sales and change prices accordingly. If the historical pattern shows that the flight usually fills up within a few days of departure, then they will not reduce prices. They will just wait and sell them to last-minute business travelers at full price. If they believe that a large number of seats will go unsold, then they will reduce prices or open up more discount seats. The fact that there are 50 seats open today doesn't mean anything. Try looking at other airlines. I picked some random days in mid-May and had no difficulty finding a fare of $342. It was a connection through Las Vegas using Frontier and US Airways.

The price may drop, but it also might not. They will try to lower the price if the flight is really empty, but as the flight approaches, most of the people who buy tickets have less flexibility and they can charge more. Plus, just because the seats are not assigned doesn't mean the seats are going unsold. Some travel agents and travel websites are unable to assign seats before check in.
